Ingredients
3 chipotle peppers in adobo sauce
3 cloves garlic
1/2 cup apple juice
1/4 cup brown sugar
1 Tbs red wine vinegar
1 tsp dried oregano
1/2 tsp smoked paprika
1/4 tsp salt
1/4 tsp freshly ground pepper
1 (1 1/2 lbs) Hormel pork tenderloin, trimmed of fat and silver skin
Directions
  1. To make marinade, combine all ingredients (except pork) in blender or food processor. Blend until mixture is smooth. Reserve 1/4 cup of marinade for basting on the grill. Pour remaining marinade into sealable plastic bag. Add pork; seal the bag. Marinate for at least 4 hours or overnight.
  2. Heat a grill to medium heat. Remove pork from marinade. Place meat on grill. Close lid. Turn heat to low. Cook for 5 minutes before turning. Open lid. Baste pork with reserved marinade before turning. Turn pork; baste the other side. Close lid. Cook for 10 more minutes. Using instant-read thermometer inserted into center of meat, check the temperature. Continue to cook and baste until internal temperature is 150° F. Remove from grill. Let rest for 5 minutes before slicing. Serve as desired.
  3. Note: Use chipotle peppers in adobo sauce from a can. Remaining peppers and liquid can be frozen for later use.
